For our macarons, we employ a Swiss meringue technique, which entails lightly cooking the egg whites before incorporating them into the macaron batter. This results in an exceptionally stable macaron base that’s forgiving even to less experienced bakers.

Four: Transfer the egg whites to a stand mixer and gradually incorporate the remaining granulated sugar. Beat the mixture on high speed until stiff peaks form and the mixture attains a glossy appearance. If you opt for food coloring, this is the ideal moment to introduce it. You’ll know the mixture is ready when it no longer feels grainy when rubbed between your fingertips.

Five: Add the sifted powdered sugar and almond flour to the egg whites. Set the mixer to medium speed and whisk for around 5 seconds.

Six: Employ a rubber spatula to scrape down the sides of the bowl, gently folding the batter from the outer edges toward the center in a circular fashion. Repeat this process until the batter achieves a consistency reminiscent of lava, allowing you to draw a figure 8 without it breaking.
