Four: Transfer the egg whites to a stand mixer and gradually incorporate the remaining granulated sugar. Beat the mixture on high speed until stiff peaks form and the mixture attains a glossy appearance. If you opt for food coloring, this is the ideal moment to introduce it. You’ll know the mixture is ready when it no longer feels grainy when rubbed between your fingertips.

Five: Add the sifted powdered sugar and almond flour to the egg whites. Set the mixer to medium speed and whisk for around 5 seconds.
